Production Process – A Rare Olive Oil from the First Harvest
Harvested on select days in October, the early-season Manzanilla Cacereña green olives are hand-picked to create this premium olive oil. It takes approximately 20 kg of olives to produce just 1 liter of oil, as the green olives contain less oil at this stage. In its continuous commitment to environmental care, in September 2007, Jacoliva inaugurated an innovative water treatment plant for the water used in cleaning olives and the alpechín from the mill. Thanks to this new purification system, the water used in the olive oil production process can be returned to the public watercourse or used for irrigation.
